A Taste of La Belle Époque at MGM Macau

Rolled out to compliment the Edgar Degas: Figures in Motion art exhibition which launched at the MGM Macau last month as part of Le French May, the Belle Époque prix fixe menu will be available at Aux Beaux Arts throughout the month of June and offers those in Macau a chance to sample dishes from France's 'Beautiful Age'.

Whet the appetite with a refreshing aperitif, lillet spritz before delving into an amuse bouche.

The entrée, oyster in Champagne sabayon, combines baked fine de claire oysters with Champagne sabayon sauce to deliver a sweet dish with a citrus punch credited to the lime garnish.

Chicken consommé à la d’Orléans is a refreshing soup entrée made with herbs and tomato chicken meatballs in clear soup topped with a puff pastry.

Turbot with diplomate sauce, white asparagus and chervil follows. French turbot is covered in a creamy velouté sauce made with fish stock, cubes of lobster meat, black truffles and homegrown chervil, served on a bed of white asparagus.
The meat course is roasted beef tenderloin topped with foie gras, mushroom and duchesse potato.

To wrap up the meal it's neapolitan ice cream. Vanilla, chocolate and strawberry ice cream is sandwiched between caramelized biscuits served alongside fresh fruit.
