New Menu and Class Offered at CHAR in Shanghai

Stuck in Shanghai as this freezing cold front moves through? Head Chef Willmer Colmenares of CHAR, the steakhouse located in the Hotel Indigo Shanghai, has devised a winter menu to make the most out of seasonal selections and to warm diners on cold winter days.

Start off with thin slices of gently smoked wagyu, presented with parmesan and rocket and black garlic puree. (RMB158)

Next, be transported to Peru with lobster and salmon ceviche (RMB188) served marinated in a tangy coconut and lime emulsion and served with avocado sorbet, coriander and jalapeños.

The smoked octopus salad (RMB139) is severed with avocado, red onion and a smoked chili sauce, while watermelon and cilantro bring a subtle sweetness to the dish.

Seared scallops (RMB188) are served with Jerusalem artichokes, an almond ginger puree and Chorizo oil, while roasted bone marrow (RMB178) is served with a potato flan and a smoked octopus and mushroom ragout.

For couples who share try the massive 1.2 kg slab of bone-in beef rib fillet that is the stockyard tomahawk (RMB1,188). If that doesn’t sound filling enough, add double-roasted baby potatoes (RMB58) with bacon and garlic butter or sautéed green beans (RMB58) with crispy shallots, roasted almonds and crumbled cheese.

For dessert, there is the classic tarte tatin (RMB98) which is flambéed table side. The spiked hot chocolate fondant (RMB78) is served with tonka bean ice cream, coffee and rum ganache, and the berries and apple crumble (RMB78) is served with a scoop of dulce de leche ice cream.

If you are looking to sharpen their chef skills, check out the new beef appreciation steak masterclass (RMB350) which starts Thursday (Jan. 28) and will take place on the last Thursday of every month from 1 p.m. to 3 p.m. The class includes a light lunch and starts with a lecture from one of the city’s largest Australian beef importers and includes topics such as animal husbandry, the various cuts of beef and breeds of cow. A demonstration by Colmenares will teach attendees what to look out for when choosing cuts of beef. There will of course be samples too!
