Kressmann Wine List Available at Privé in the Sofitel Macau

Until the end of October, Sofitel Macau and Kressmann Wine Company are offering diners the chance to pair gourmet French cuisine with a selection of Bordeaux wines at French restaurant Privé. Last week we were invited to lunch to try some expert pairings.
First up was a sea bass carpaccio topped with citrus dressing, chilli and orange sorbet and fresh dill. This was paired with a 2011 Château Latour-Martillac blanc, Pessac-Léognan Grand Cru. Perhaps better suited to a dish a little bit less acidic, for us the wine was slightly overpowered by the citrus flavors of the dish.
Pan-fried foie gras with berries was paired with a 2012 Château Roumieu Haut Placey, Sauternes. This, we were told, was a relatively safe pairing as the sweetness of the wine cut through the fatty foie gras. This one was a favorite around the table.
Roasted New Zealand lamb with eggplant caviar was paired with a 2011 Château Latour-Martillac Rouge, Pessac-Léognan Grand Cru. Our pick of the bunch, the wine was silky and smooth and worked very well with the delicate yet flavorful lamb.
Brie and truffles were paired with a 2011 Château La Commanderie Saint-Estèphe, Cru Bourgeois. It’s hard to go wrong with any sort of red wine and cheese combination, and this one definitely didn’t disappoint. This was a great ending to a decadent meal.
